While I was able to healthy-fy the cupcake part and come up with a healthy red velvet cake alternative, I struggled with finding a healthy substitute for cream cheese frosting. Until now…
This is a light version of cream cheese frosting made with cashews, dates and lemon juice. It’s free of dairy and sugar. So anyone regardless of their diet can enjoy it. Oh, and did I mention that it’s also raw vegan? Double win!
I love the fact that you only use natural, nutrient-rich ingredients for the icing. Raw cashews are a great source of iron, protein, magnesium and essential antioxidants and help to prevent cancer, heart diseases and improve hair and skin health. Dates are just as awesome in the health benefits department! They provide relief from constipation, heart problems, anemia and many other health-related problems.
Wait a minute. If this is a healthy cream cheese frosting, where is the cream cheese? Turns out you don’t need it! When blended, raw cashews look and taste very similar to the traditional and beloved (but oh so unhealthy) icing.
Make sure to soak your cashews for at least 2-3 hours prior to making the frosting. Personally, I like to soak nuts overnight. So that when I wake up, I’m all ready to make my delicious dessert. Soaking allows to remove byproducts, acids and enzymes, making the nuts easier to digest. I think it even makes nuts taste better.
I’ve used this cashew frosting to make carrot cake before, and it works like a charm. It’s also perfect for decorating carrot cake cupcakes. My friend, Lainey, from SimplyBakings shared her recipe for carrot cake cupcakes with me. I combined the two recipes to create these heavenly treats.
I recreated Lainey’s cupcakes using spelt flour, coconut oil and coconut palm sugar. They turned out AMAZE BEANS!
- 2 cups raw cashews
- ½ cup dates
- 1 tbsp lemon juice
- pinch of sea salt
- water as needed
- Soak cashews in 4 cups of water for at least 2 hours prior to making the frosting.
- Blend all ingredients in a high speed blender or food processor until smooth. Add water if needed to reach the desired consistency.
- Refrigerate until needed.
